ABSTRACT The objectives of the study were to develop products from sorrel calyces, leaves and seeds, evaluate  the  products  for  nutrients,  phytochemicals,  antinutrients,  food  toxicant,  physico- chemical,  microflora,  sensory,  storage properties  and compare  the products  produced  with existing products.
